Strawberry Custard Pepitas and Date Protein Balls

A great twist on your classic protein ball. This one delivers 10.9 g of dietary fibre per pouch of South Australian Gourmet Food Company Strawberry Fruit Custard. Fibre is essential for the health of your gut. It is also linked to improved blood sugar levels, healthy weight, and blood pressure.

Ingredients
  

  • 8 pouches of South Australian Gourmet Food Company Strawberry Fruit Custard with Added Fibre
  • 1 cup pepitas pumpkin seeds
  • 1/3 cup almonds
  • ¼ cup 100% peanut butter
  • 300 g pitted fresh dates
  • ¼ cup coconut flour
  • 1 tbs cacao powder
  • 2 tbs white chia seeds
  • cups shredded coconut

Instructions
 

  • Place dates into a food processor and process until cut into pieces.
  • Leave the coconut to the side and add the remaining ingredients and 4 pouches of South Australian Gourmet Food Company Strawberry Fruit Custard with Added Fibre into the processor. Process until mixture is well combined.
  • Place mixture into a mixing bowl and make balls of mixture using a tablespoon.
  • On a tray lined with baking paper place each ball.
  • In a separate bowl add 4 pouches of South Australian Gourmet Food Company Strawberry Fruit Custard with Added Fibre and in another bowl the coconut.
  • Dip half of the ball into the South Australian Gourmet Food Company Strawberry Fruit Custard with Added Fibre and half into the coconut.
  • Place back onto the tray.
  • Place in the fridge for 1 hour.
  • Enjoy!

These strawberry custard pepitas and date protein balls are healthy and delicious.

Pepitas and chia seeds contain antioxidants that help fight off free radicals that can cause damage and disease to the cells of your body. Pepitas supply magnesium which is needed for nerve and muscle function as well as for maintaining strong bones and balanced blood sugar levels. Also, iron is needed to transport oxygen around your body and plays and a role in keeping your immune system working at its best.

Chia seeds are a good source of heart-healthy omega-3 fat. This fat is needed for normal heart, eye, brain and artery function. Peanut butter supplies protein which also helps to keep you feeling fuller for longer and is needed to make and repair all the cells in your body. Coconut is a great source of manganese which is needed for your body to metabolise carbohydrates, protein, and fat. Also, potassium which is a mineral is needed to regulate healthy blood pressure levels.

Coconut is also a good source of magnesium which keeps your nerves and muscles working well. Also, phosphorous which is needed to create strong bones as well as iron which is needed to transport oxygen around your body and plays an important role in optimal immune system function.

Cacao has phytochemicals or plant-based chemicals which have health benefits for your body. One main type of phytochemical found in cacao are flavonoids which act as antioxidants. Antioxidants help to fight off free radicals which can cause damage and disease to the cells of your body.
