Chilli Beef & Vegetable One Pot Rice
A tasty Asian inspired rice dish, SAGFC Chunky Beef & Vegetable Soup is used as the base stock to flavour rice in an easy one pot meal with a chilli hit.
Ingredients
- 1 x 430g SAGFC Beef & Vegetable Soup
- 2/3 cup long grain rice
- 1/2 cup peas and corn
- 1/2 cup boiling water
- 2 spring onions cut diagonally
- 1 fresh chilli and extra for garnish
- 1 tbsp soy sauce and extra to serve
Instructions
- Preheat oven to 180 o degrees.
- Place rice, soup, soy and chilli in a small oven proof dish.
- Cover with foil and bake in the preheated for 10 mins or until the rice has started to absorb the liquid.
- Remove from oven and stir in the veggies, spring onions and water. Cover and return to the oven.
- Cook for another 10 mins or until the rice is tender (feel free to add a little extra water if the mix gets too dry).
- Serve with a few chilli slices scattered on top, with sweet chilli sauce and soy.
This dish can also be made in a microwave to speed up the cooking time, follow the steps above, cover with cling film and use high power for 3 minutes, stir add the veggies, water and spring onion, cover and cook again till the rice is tender.
